Chef Brian Roland is a celebrated culinary artist, visionary entrepreneur, and founder of Crave Culinaire. Known for his exceptional talent, deep sense of community, and unwavering commitment to giving back, Chef Brian has left an indelible mark on Southwest Florida’s culinary landscape.

A graduate of the prestigious Culinary Institute of America, Chef Brian honed his craft under world-renowned Chef Daniel Boulud and held executive chef positions at acclaimed establishments including Cru in Fort Myers, Chops City Grill in Bonita Springs, and M Waterfront Grille in Naples. In 2013, after a decade of dreaming and planning, he launched Crave Culinaire—a bold and innovative catering company that redefined luxury dining experiences in the region. From elegant cocktail soirées to intimate in-home dinners, Crave Culinaire continues to deliver unforgettable moments through food and hospitality.

At the height of his career, Chef Brian faced a life-altering accident that profoundly impacted his journey. Through extraordinary resilience and the steadfast support of his wife Nicole, daughter, Remi, and a loving community of friends and colleagues, he navigated the challenges of recovery with grace and determination. With Nicole by his side, his vision for Crave endured and evolved.

Now, they are opening their hearts and sharing their journey—from trauma to triumph—to inspire others and to stand with David Lawrence Centers for Behavioral Health (DLC) in its mission to provide exceptional lifesaving and life-changing behavioral health care to all. Their story is a testament to the human spirit’s ability to rise, rebuild, and renew.  They remain dedicated not only to culinary excellence but also to inspiring and uplifting others through his story and his work.
